The Pumpkin seed, the most over looked part of the pumpkin, be it Pie Pumpkins or carving pumpkins are these wonderful seeds. A few years ago my daughter ( Kaylee ) used to make them for me and is the one who actually got me into saving these seeds and I have been saving them ever since. If you like sunflower seeds you will also enjoy pumpkin seeds as well, You can top them off with BBQ powder, pickle juice or just keep them plain jane like the very simple recipe below. Pumpkin seeds are packed full of essential nutrients your body needs and Very high in magnesium. They also help Improve prostate and bladder, heart, eye, bone health as well as boosts the immune system and Lowers blood sugar levels.

1 ½ cups raw whole pumpkin seeds
2 Olive Oil
1 pinch salt
Preheat oven to 300 degrees F (150 degrees C). Toss seeds in a bowl with the Olive Oil and salt. Spread the seeds in a single layer on a baking sheet and bake for about 45 minutes or until golden brown; stir occasionally.
